It’s Melon Time in North Texas; How to Turn That Excess Melon into Sweet, Frozen, Summer Memories.

I feel as if I a right on the precipice of the “hotter than Hades” part of the season. The only thing standing between me and that “Hell Hole” is melons! Oh sooo sweet and juicy! However, all my melons have ripened all at once! That means a LOT of melon goodness! Yes I gave them away to friends, family, neighbors. Still I had a lot of melons.

The answer to this excess of melon was simple and ingenious. My daughter and her best friend came up with the solution; Make them into Popsicles! This is so easy a monkey could make it. After you get your molds, it is a few short steps to Mom of the Year, or at least the Summer!

Step one; Puree cantaloupe in a food processor or blender.

Step two; Puree fresh strawberries, or any other frozen fruit you have on hand. Stir these two pureed fruits together.

Step three; Pour into molds and freeze. There you have it; MOM OF THE SUMMER!

O.K. disclaimer here; I have to admit that my kids don’t have much, so a frozen treat on a hot day is akin to a miracle. I guess I have never looked at the beauty of this until just now. How The Father blesses us when we are not even looking.
